Red Aztec Spinach   ….   Huazontle

a relative of Lambs Quarters and Quinoa.    At this time,  the leaves are almost not significant,  but are so much exactly like Lambs Quarters.    Over 5ft tall but now bending with the weight of the bloom,  which is time to harvest.  We've eaten the leaves all along in the Morning Leaf Food but this is New and exciting.  A way it is commonly made in Mexico is to steam the blossom stems,  leaving a short bit of the stem stalk to hold.   Then stuff the blossoms with Oaxaca cheese,  squash it in and together with hands so it holds together,  dip through batter and fry.

    the leaves would be…on the AIP list. Seeds…maybe not.
    But she is at the point of “adding in”. Eat it. See what happens. I brought some this morning. We’ll begin to add it to our Leaf Meals…the morning meals. We will get some of the Oaxaca cheese, Try it. See what the response is.
    Even with her diet, i still eat things, still cook for
    the kids, Julian 9 and Emrie 1.
    It IS. a stunning and brilliant Plant. Generous and exuberent. The thing to do would be to TRY it. Is acclimated for dry farming. But i give water once a day….so…to Try?

    We will let it continue in it’s Full Cycle, which would
    be into seeding. I read somewhere that seeds were used as flour for tortillas…couldn’t find that this morning, will keep looking…
    and i think it is edible and NUTRICIOUS in all its manifestations
